Experience these natural delights from 6-13 November 2009 as our guest oyster shucker – Mr. Michael Fillippidis, owner of an oyster farm in Streaky Bay, entices you with freshly shucked oysters.

With a typical grey hue coloured shell and a distinctive “crispness”, Oysters from Denial Bay will leave you a lasting impression with its juiciness and its briny overtones. Fed by the rich and nutritious waters of the Southern Ocean, Oysters from Smoky Bay are renowned throughout the world for their sensational “Sweet Ocean” taste and their wonderful presentation. With an even shade and an elongated shape, Oysters from Streaky Bay are filled with tenderness and a unique sweet finishing. Treat yourself to one of nature’s true delights as you let the freshness of the Coffin Bay Oysters melts in your mouth. About Michael Filippidis:
Michael Filippidis began oyster farming in the early 1990s when he and his wife purchased an Oyster farm in Streaky Bay. For the first ten years Michael spent his time developing and growing the farm and the volume of Oysters he produced. In 2004 he branched out into marketing oysters for the export market. Within the first year exports grew so much he had to leave the farm to be managed by his brother and involved other farmers to supply stock to keep up the demand from overseas customers. Now Mike has joined with other farmers from 6 different regions to make the company larger and have stock available from different bays all year round. The company now has Pacific Oysters, Sydney Rock Oysters and Angasi Flat Oyster. Mike has branched out and now grows Blue Mussels which he exports to Hong Kong.
